Arizona Adventure

Jake and I had the opportunity to take a trip to Arizona! Kiewit (the company I work for) flew us down for a company meeting hosted by the Southwest District. I work in the corporate office, so I got to learn more about the SW District, meet some great people, and enjoy Tucson in February!! This is what we left in Omaha:



And this is what we arrived to in Tucson...we stayed at a beautiful resort in the middle of the Sonoran desert and Tucson Mountain Park.

I tried to take a picture of the sunrise over the mountains. I was a little early, but I loved the orange sky!


Jake went to some of the meetings with me, but he got to spend Friday afternoon out on the golf course. Since Kiewit is a construction and contracting company, the majority of the employees are male. So, I was a little jealous of all of the wives that got to lay out at the pool and enjoy the spa while I was in meetings.


Friday evening was a semi-formal "Denim and Diamonds" western event. We had a delicious seafood dinner followed by dancing and a live band!


I loved the creative centerpieces with the cowboy hat!






Saturday night was a casual evening of boot-scootin' fun! We ate ribs, baked beans, corn bread, and all the fixings - all served in huge cast iron skillets! The activities after dinner included lassoing, horseshoes, fast draw competitions, bottle toss, bull riding, and much more. Jake and I loved the country band and spent some time out on the dance floor learning some line dancing!

Kiewit showed some hospitality by sending a basket of treats and flowers to our room!

My Complete!

I am super excited because my Juice Plus Complete came in the mail today! I have been really excited about this! :-) (It's the little things in life...)


Complete is an all-natural, non-dairy, whole food-based drink mix. By whole food based I mean the ingredients list includes things like chickpea powder, artichoke powder, dried fruit juices, pumpkin seed powder, carrot, kale, cabbage, and broccoli powder, oat powder, rice protein, spirulina and other seaweeds/algae that are rich in vitamins and minerals and the list goes on. It's sweetened with all natural fructose and contains no sucrose, caffeine, saturated fat, cholesterol and no artificial sweeteners, colors, flavors, preservatives, etc. etc.

It's a healthful snack, pre- or post-workout drink, or can be used for a great breakfast shake! Can't wait to add it to my smoothie tomorrow morning! :-)

So what do we do? It's up to you!

That last post was a little discouraging, so here are some steps we can take as alternatives to America's industrialized food model. The choices we make at the grocery store determine the future of our food!!

Fun fact about Nebraska: Nebraska is one of a few states that have passed constitutional amendments that ban non-family owned farming. When the food corporations said that Nebraskan's don't have the authority to do that, the Nebraskan Supreme Court said that yes we do!
  • Buy locally to support sustainable living (farmers markets are a fun way to do this!)
  • Eat foods that contain all-natural ingredients
  • Eat organic fruits and veggies
  • Do your research and know what you are putting in your body because the food we eat affects every cell in our body. With every food choice you make you are either investing in your wellness or subsidizing your illness (Thank you Dr. Mitra Ray!)

Food Documentaries

Over the years I have had increasingly more interest in my personal health and wellbeing. Now that I am married, I also have invested interest in my husbands health and want to make sure I am preparing meals for us that are the best for our health. Since I am the primary grocery-shopper, the decisions I make about the foods we eat will affect our bodies, so I feel a sense of responsibility to know what I am feeding my familySo, I have been doing my research...and what I have found is alarming!

I've seen a few documentaries on the food industry, the importance of fruits 
and vegetables, and the effects of genetically modified foods. The most recent documentary I have seen is The Future of Foods:

The Future of Foods
Before you make your next grocery list, you might want to check this out. The FOF sheds light on the shady relationship between agriculture, big business and government. It talks about the origins of genetically engineered food and what GMO's (Genetically Modified Organisms) are doing to our food supply. Not only do these foods contain harmful chemicals, bacteria, and antibiotics but because they are corporate hybrids they can be patented. If the wind picks up a seed that has been patented and drops it on someone's farm and it cross pollinates with their crops, the strain of the crop may contain the marker gene that was patented. The farmer can then be held liable for violating patent law. Incredibly, many farmers have been sued for this very reason. Farmers are being put in a position where they feel they have to buy these genetically engineered patented seeds each time they plant for fear of being sued. This affects everyone because it dramatically reduces the quality of the produce.


I'm a label reader so any processed foods have to meet certain criteria. Ingredient labels show us what harmful ingredients are in food like MSG, high-fructose corn syrup, aspartame, BHA & BHT, artificial colorings, etc., but why don't they label genetically engineered produce? Shouldn't we know how our fruits and vegetables are being farmed?  If my corn on the cob is classified as a pesticide because any insect that eats it dies, (yes, this is true) I want to know!

So, Monsanto is a large company that produces genetically engineered, patented seeds; herbicides and pesticides (like Round Up weed spray); and more. They have bought out tons of seed companies and are dominating the industry.

The scary thing is that some of Monsanto's former top executives are now working for the government in the FDA and EPA (Environmental Protection Agency).

Oscar-nominated documentary that sheds light on the food industry and it's detrimental effects on our health and environment. This is an eye-opener for sure!


King Corn
 
Two guys move to Iowa to plant and acre of corn (America's most grown and subsidized grain) and they follow it into the US food supply. They found corn in almost every processed food in the grocery store. The two friends even plucked 2 hairs from their own heads and researchers found strands of corn in their hair...that is how much processed corn we are consuming!

Killer at Large

This explains "why obesity is America's greatest threat" because is causes 110,000 deaths a year and contributes to 1/3 of all cancer deaths in the US. Despite concerns, little is being done on the public policy level.

I love love!

I know I'm a few days late, but Jake and I had a great Valentines day on Monday! It was our first Valentines as husband and wife and it was perfect! We loved staying in, making a pizza together, and watching a movie in sweats. I know it's cheesy, but I absolutely loved shopping for a card for Jake that said "husband" in it...and I found the perfect one! :-) Jake was so sweet and had flowers and goodies waiting for me in the kitchen when I got home from work.

Strawberry Banana Smoothie..yum!

When I make smoothies, I usually guess at how much of each ingredient to add. Well, this morning I actually measured out the ingredients and it turned out really well!

Strawberry Banana Smoothie
Serves: 2

4 tablespoons ground flax seed
1 cup almond milk
3 bananas
2 1/4 cup frozen strawberries

You can add some cold water if smoothie is too thick!



2010 In Review

2010 was a big year! Here is a high-level overview...

New years - Jake Proposed while I was visiting him in Omaha for the first time!


I got to take a little vacation to Orlando at the end of January. It was amazing going from snowy Ohio to sunny Florida. Jake was already down there on business and Jessica, Grant and the kids also came down. We all stayed with John and Alma. It was a wonderful time. The weather was so perfect, I slept on the screened-in porch!



My family moved from Canton, OH to Knoxville, TN in March. Caleb was such a trooper moving in the middle of his junior year of high school. (this picture was taken on Easter off of my parents' deck at the new house)


I finished up my last semester at Cedarville University with some of my most amazing friends!



And then graduated on May 1st!



Then I took a road trip to Florida with 4 friends from high school



Then I moved out to Omaha and started working in Leadership Development at Peter Kiewit Sons, Inc. Chris and Natalie were kind enough to open their home to me for the 4 months I lived in Nebraska before Jake and I got married. 



My brother, Seth, and Emily got married in August! The picture below was from their rehearsal dinner.


Then Jake and I got married in October!


Jake and I honeymooned in Mexico!







We spent the week of Thanksgiving in Knoxville





For Christmas, Jake and I drove from Omaha to Indianapolis...then to Canton...then to Lucasville...then back to Indianapolis...and then made the drive back to Omaha. I think it was about 30 total hours of driving in 5 days! Yikes! It was worth it though!






Jeff and Susan from Dallas came to Omaha for New Years!!


My First Post!

I created this blog for several reasons....to help friends and family keep up with the Kissel's, i.e. what we are up to; to share encouragement, nutritional info, recipes, ideas, thoughts, etc. etc. to anyone who is interested; and to use it as a "virtual scrapbook" because I simply can't find the time to keep up with scrapbooking anymore! A couple of my friends - all located in the midwest - have started blogging...it must be a midwestern thing? Not sure! Anyway, I think it will be fun!


So, for starters I have to put up a couple of throwbacks. Jake and I got married on October 9, 2010 and at our wedding reception we had a slideshow of Jake and I growing up. It took a while to make, but I think everyone enjoyed it!
