I made this for dinner with some roasted rutabaga and it was pretty good. I mean, who doesn't like a little bacon with their green beans? The flavors are awesome! So why not add some chicken and make it a meal! I adapted this recipe from Nourished Kitchen - one of my favorite food blogs. Below is my version of this dish:
In order to enjoy this fully, make sure you use good quality meats!
6 slices bacon, chopped
1 pound boneless, skinless chicken thighs, chopped (first time cooking with this!)
3 cloves of garlic, minced
1 onion, chopped
1 pound of green beans
1/2 cup grated parmesan cheese
1/2 cup milk (original recipe calls for coconut milk, but I was fresh out! Cows milk worked fine)
Cook bacon in a large skillet and then set aside on a paper towel.
Cook chicken in the bacon grease with the garlic and onions. Once chicken is cooked through, add the green beans and cooked bacon. Cover and simmer for 10 minutes. Stir in cheese and milk until well combined. Enjoy!
